VEGETABLE STIR - FRY 
1/2 c. chicken broth
3 tbsp. soy sauce
1 tbsp. cornstarch
2 tbsp. oil
1 tsp. ginger
1 clove minced garlic
3 c. vegetables (zucchini, mushrooms, precooked broccoli)
1 lb. bite size pork
1 c. walnuts
1 med. tomato

Blend broth, soy sauce, and cornstarch; set aside. Heat oil and stir-fry garlic. Add vegetables; stir and remove. Add pork and cook until brown. Push meat aside and stir-fry walnuts. Add soy mixture. Cook until bubbly and add vegetables plus the quartered tomato. Heat through. Serve over rice.
