CHICKEN AND WILD RICE CASSEROLE 
2 boxes UNCLE BEN'S® wild rice
1 sm. can mushrooms
4 lbs. chicken breasts
1 onion, chopped
1 stick butter
3 tbsp. flour
1 1/2 cans mushroom soup
1 c. milk
1 lb. sharp grated cheese

Use 13 x 9 x 2 inch casserole. Cook and debone chicken. Cook rice as directed. Prepare sauce - saute onion in melted butter. Blend in flour, soup and milk. Add mushrooms. Layer rice, chicken, sauce and cheese. Bake at 350 degrees until bubbly - 30 minutes. Serves 12-14. Freezes well.
