WILD RICE SALAD 
2/3 c. wild rice or combination wild and white
2 c. water
1/4 tsp. salt
16 oz. ham, cubed
1 lg. tart apple
1/2 sm. red onion
1/2 to 1 lg. red bell pepper
1/2 c. raisins
1/2 c. chopped pecans
1 1/2 tbsp. red wine vinegar
2 tbsp. olive oil
Lettuce
Salt
Pepper

Cook rice and set aside. Core and dice apple. Thinly slice onion; cut pepper into small squares. Toss all ingredients except rice and lettuce. Season to taste with salt and freshly ground pepper.

Line a serving platter with lettuce leaves. Add room temperature rice and top with ham and vegetables. Serves 4 and is especially good in the summer.
