VEGETABLE FRITTATA 
Cook broccoli and carrots until almost done; drain. Scramble 6 eggs (no milk). Add 1 cup cottage cheese. Spray casserole with PAM. Place vegetables in pan. Pour egg mixture over top. Bake for 30 minutes at 350 degrees. Place sliced tomatoes on top. Sprinkle with Parmesan cheese. Heat an additional 5 minutes.
