BREAD DUMPLINGS 
6 c. small cubed dried French bread
3 oz. butter
1 med. sized onion
Finely ground parsley
2 eggs
1 c. milk
3 oz. flour
Salt
Pepper

Cut French bread into small cubes and bake in oven until dry. Cut onion and parsley very fine and cook in melted butter.

Place the cooked onions, parsley and dried bread cubes into a large bowl. Add the 2 eggs, milk, salt and pepper. Beat this mixture until all ingredients are thoroughly mixed then add the flour. Continue to mix until mixture is paste like. Form medium sized balls (dumplings) with hands.

Place water in a large cooking pot, salt and bring to a boil. Put the dumplings into the boiling water and lower heat to simmer and allow to cook for 10 to 15 minutes.

Recommendation: cook one dumpling first to determine the consistency of the dumpling dough before proceeding to cook all dumplings. If consistency is too soft add a little more flour to the mixture to thicken dough.
