CREAMY RICE PUDDING 
1/2 c. uncooked rice
1/2 c. water
1/2 tsp. salt
2 3/4 c. milk, split
1/2 c. raisins
1-3 tbsp. butter
2 eggs, beaten
1/3 c. sugar
1/2 tsp. vanilla

In top part of double boiler combine rice, water and salt and bring to boil. Reduce heat, cover and cook about 9 minutes, or until the water is absorbed. Stir in 2 1/4 cups milk, cover and cook over low heat about 1 hour, placing over bottom of double boiler with boiling water. Stir occasionally.

Meanwhile, cover raisins with boiling water. Let stand 15 minutes and drain into colander. Set aside.
