CHICKEN PARMIGIANA 
8 boneless chicken breasts (1 lb.)
1/4 c. seasoned flour
2 eggs, beaten
1/2 c. bread crumbs
6 tbsp. oil
1 c. Marinara sauce
1/2 lb. Mozzarella, sliced thinly
1/2 c. grated Parmesan cheese

Dip chicken in flour to coat lightly, shake off excess. Dip in beaten egg, then coat with bread crumbs.

In large skillet, quickly saute chicken in hot oil until golden brown on both sides. Drain on absorbent paper. Arrange chicken in a shallow dish. Cover with Marinara sauce and Mozzarella cheese. Sprinkle with Parmesan cheese and bake at 350 degrees for 15 minutes. Yields: 4 servings.
