ENDIVE FILLED WITH SALMON 
2 oz. smoked salmon
12 sm. endive leaves
3 tbsp. olive oil
1 tbsp. fresh lemon juice
Salt
Pepper, preferably white
Alfalfa or other sprouts

Place a piece of salmon on each of endive leaves. Sprinkle sprouts over salmon. Whisk oil, juice, salt and pepper in small bowl. Place filled endive in circular pattern on plate. Drizzle a little sauce over them. This is also good with Boursin or other spreadable cheese. Dressing is not needed with cheese.
