ESCAROL (ENDIVE) IN SAUCE 
2 lbs. endive
1 c. Italian spaghetti sauce
1/4 stick dry sausage

Wash out endive and cook in 2 quarts of boiling, salted water for 15 minutes (reserve 1 cup of the endive water). In another pan put cooked endive, spaghetti sauce and cut up small pieces of dry sausage. Let simmer 15 minutes. Recipe serves 2 as a meal or 4-6 for a side dish.
