SWEET POTATO PUDDING 
4 med. sized sweet potatoes
3 med. sized apples
1 c. apple, orange or pineapple juice
Chopped nuts
2 tbsp. honey
2 tbsp. water
1 tbsp. cornstarch
1/2 c. granola
Cinnamon

Steam potatoes 15 to 20 minutes until tender. Peel and slice lengthwise about 1/2 inch thick. Layer sweet potatoes into 9 x 13 inch ungreased casserole. Wash and core apples. Slice about 1/4 inch thick and layer on top of potatoes. In sauce pan heat fruit juice to a boil. Combine cornstarch and water and add to juice. Cook until thick, add honey. Pour over the apples then top with granola. Sprinkle with chopped nuts and cinnamon. Bake 325 degrees for 45 minutes to 1 hour or until tender. Yields 8 servings.
