I use green and red canned peppers sometimes. 1 lg. green pepper 4 lg. cucumbers, thinly sliced 5 sm. white onions, thinly sliced 1 lg. clove garlic 1/4 c. salt 2 qts. cold water 14 ice cubes 3 1/2 c. sugar 1 1/2 c. "white" vinegar 1 tbsp. mustard seed 1 tsp. celery seed 1 tsp. ground turmeric Chop green pepper. Put green pepper, cucumbers, onions and garlic in large bowl. Sprinkle with salt. Add water and ice cubes. Let stand 2 hours. Remove garlic and drain vegetables. Mix sugar, vinegar, mustard seed, celery seed and turmeric in large kettle. Add vegetables. Bring just to a boil over high heat. Remove from heat, pack in jars and seal. Makes 3 pints. |
