BUTTERMILK BRAN MUFFINS 
2 c. buttermilk
1 egg (or substitute)
2 tbsp. shortening
2 tsp. baking soda
1/2 c. chopped dates (or raisins)
1 c. bran or bran cereal
1/4 c. brown sugar or molasses
1 c. whole wheat flour
1/2 tsp. salt

Soak bran in buttermilk. Meanwhile, beat together egg, sugar and shortening. Mix soda and salt into flour. Combine egg, flour and bran mixtures. Add dates or raisins. Let stand 1 hour before baking. Bake at 350 degrees for about 15 minutes. (If desired, you may bake part of this recipe; remaining batter can be stored in the refrigerator for up to 2 weeks.
