BUTTERMILK BRAN MUFFINS | |
3/4 c. bran 1 c. buttermilk Egg substitute to equal 1 egg 1/3 c. honey 1/3 c. vegetable oil 1/2 c. raisins (optional) 1/2 c. shredded carrots 1 1/4 c. flour 1 tsp. baking soda 1/4 tsp. salt 1 tsp. nutmeg Combine bran, buttermilk, beaten egg substitute, honey, oil, raisins and carrots. Let stand 10 minutes. Combine flour, soda, salt and nutmeg. Make a well in center and add the bran mixture. Stir just to dampen flour; batter should be lumpy. Spoon batter into lightly greased muffin pans, filling 3/4 full. Bake at 425 F. for 15 to 20 minutes. (Calories: 177 per muffin) |
