SWEET POTATO DESSERT CASSEROLE | |
2 eggs 1/2 c. milk 3/4 c. butter, softened 1 can sweet potatoes, drained and mashed 1 tsp. vanilla extract 1/2 c. flour 1/2 c. packed brown sugar 1/2 c. chopped nuts Place eggs, milk, sugar, and half the butter in blender for 1 minute (process). Add potatoes gradually; blend well. Add vanilla and blend. Pour into greased casserole. Mix flour, remaining butter and brown sugar in small bowl until crumbly; stir in nuts. Sprinkle over potato mixture. Bake at 375 degrees for 25 minutes. |
