OATMEAL MUFFINS 
1 c. Quaker Oats
1 c. buttermilk
1/2 c. shortening, softened
1/2 c. light brown sugar
1 egg, beat well
1 c. sifted flour
1 tsp. baking powder
1/2 tsp. baking soda

Combine oatmeal and buttermilk and let soak for 1 hour. Add egg, sugar and shortening. Mix well. Stir in dry ingredients. Bake in 400 degree oven for 15-20 minutes in greased muffin tins. Makes 12 muffins.
