GOOD MORNING CASSEROLE 
8 pieces bacon, fried until crisp
4 potatoes, cubed and peeled
1/2 c. chopped onion
1/4 c. chopped green pepper
6 eggs
1/2 c. grated cheddar cheese

Boil potatoes until firm, but not mushy. Brown onions and pepper in a small amount of reserved bacon fat. Place potatoes, onion, and pepper in a greased casserole. Just before serving beat eggs with a fork and pour over potatoes. Crumble bacon over this and top with cheese. Bake at 350 degrees for 20 minutes.
