PASTA WITH PESTO | |
1 pkg. fresh basil (about 1/2 c.) 1/3 c. pine nuts (or walnuts) 2 cloves garlic 1/3 c. olive oil 1/2 c. Parmesan cheese, grated 3/4 lb. cooked pasta (linguini) Cook pasta as directed while you prepare pesto. Place basil leaves with nuts and garlic in food processor and process until finely chopped. With machine running, pour in olive oil in thin stream. Add cheese, salt and pepper to taste. Thin with 2 tablespoons hot pasta water. Toss pesto over hot, drained pasta and serve. 3 servings. |
