DRY-COOKED STRING BEANS 
1 lb. string beans, young
3/4 c. oil
1/4 c. pork, slivered
2 tbsp. dried shrimp, chopped finely
1/2 c. hot water
4 tbsp. Szechuan pickled mustard greens, minced

SAUCE:

1 tbsp. soy sauce
2 tbsp. water
1 tsp. sugar
1/2 tsp. sesame oil

Remove ends of string beans. Cut into 3 inch lengths. Heat wok. Add oil. Just before oil starts to smoke, add string beans. Fry 3 to 4 minutes. Remove. Drain string beans. Using the same wok, pour off all but 1 tablespoon of oil. Stir-fry the ground pork until cooked. Add pre-softened dried shrimp which had been soaked in hot water and strained. Stir-fry. Add pickled mustard greens. Stir-fry greens for about 1 minute. Return string beans to wok. Mix everything. Sprinkle with sesame oil. Serve.
