ROAST LAMB WITH HERBS | |
2 tbsp. parsley 1/2 tsp. pepper 1 tsp. rosemary 1 tsp. thyme 1 tsp. tarragon 1 tsp. salt 1 tsp. garlic salt 4 lb. lamb roast or leg or 2 teaspoons salt and 2 garlic cloves, sliced and stuck in meat at various places. Rub spices in lamb. Put lamb in small pan (10 x 6 inches or whatever it will fit in without too much extra space). Put about 2 cups water in the bottom of the pan. Roast at 325 degrees a good 3 hours for a 4 pound roast. Baste meat occasionally during cooking. |
