SQUASH CASSEROLE 
2 lb. zucchini
1/4 chopped onion
1 c. shredded carrots
1 c. sour cream
1 can cream of chicken soup
2 (8 oz.) boxes Stove Top cornbread stuffing

Saute zucchini and chopped onion for 5 minutes. Mix sour cream and soup and carrots. Add zucchini. Layer 1 box stuffing (already made up) on bottom of 9 x 13 pan. Layer zucchini mixture next. Top with 1 more box stuffing (already made up).

Bake 350 degrees for 25 to 30 minutes.
