SPINACH RICOTTA QUICHE 
2 pkgs. frozen chopped spinach (10 oz.)
1 c. Parmesan cheese
1 sm. onion, chopped
3 tbsp. butter
1/2 tsp. salt, dash pepper
1/4 tsp. nutmeg
15 oz. ricotta cheese
1 c. light cream or half and half
3 eggs

Put pie crust in pan. Prick. Bake at 400 degrees for 6 to 8 minutes. Cook spinach. Drain well. Saute onion in butter, until tender. Mix remaining ingredients, add spinach. Bake at 350 degrees for 50 to 60 minutes or until firm. Let stand a few minutes.
