CAJUN CAKE 
2 c. plain flour to which 1 1/2 tsp. baking soda is added
3 eggs, beaten
1 1/2 c. sugar to which 1/4 tsp. salt is added
1 lg. can crushed pineapple, undrained

Sift all dry ingredients together. Add eggs and pineapple and mix all together thoroughly. Pour into greased and floured 9 x 12 pan. Bake at 325 degrees for about 35 minutes.

TOPPING: A small can Carnation milk; 1 stick butter; 1 cup sugar. Mix together in saucepan and bring to boil, stirring constantly. Boil approximately 6 minutes and add 1 cup ground pecans and 1 cup coconut. Pour while hot over the cake.
