CRANBERRY-GLAZED PORK ROAST 
4 lb. boneless pork loin roast
2 tsp. cornstarch
1/4 tsp. cinnamon
1/8 tsp. salt
1/2 tsp. grated orange peel
2 tbsp. orange juice
2 tbsp. dry sherry
1 (16 oz.) can whole berry cranberry sauce

In small saucepan stir together all ingredients except pork. Cook, stirring over medium heat until thickened; set aside. Place pork roast in shallow baking dish. Roast at 325 degrees for 45 to 50 minutes. Spoon 1/2 cup of glaze over roast and continue roasting for 35 to 45 minutes more (until internal temperature is 155 to 160 degrees). Let stand 10 minutes before slicing and serve with remaining sauce. Serves 16.
