HAWAIIAN CHICKEN 
3 lbs. chicken, cut up
1/3 c. butter
1/4 c. soy sauce
1 (16 oz.) can pineapple chunks
1 clove garlic, grated
2 tbsp. lemon juice
4 tbsp. cornstarch
1/4 tsp. ginger

Mix soy sauce and garlic; pour over chicken and marinate overnight. Drain chicken. Sprinkle chicken with cornstarch. Melt butter in shallow baking dish. Place chicken, skin side down, in dish. Bake for 30 minutes or until brown at 375 degrees. Turn chicken; pour pineapple and lemon juices in bowl with marinade sauce. Add ginger. Mix. Pour over chicken and bake for 25 minutes. Serve with rice.
