JOLLY GINGERBREAD MEN 
1 c. butter (butter)
1 c. sugar
2 egg whites
3/4 c. molasses
1 tsp. vinegar
4 3/4 c. whole wheat pastry flour OR 3 c. white flour and 1 3/4 c. wheat flour
1 1/2 tsp. salt
1 1/2 tsp. baking soda
1 tsp. ginger
1 1/2 tsp. cinnamon
1 1/2 tsp. cloves
(1/2 c. raisins - used for decoration)

Cream butter and sugar. Stir in next 3 ingredients. Mix all other ingredients in a separate bowl. Don't pack flour!! Add to butter mixture. Chill for 3 hours.

Preheat oven to 375 degrees. Divide into 4 balls. Place between 2 sheets of lightly floured wax paper and roll out. Cut out with floured cutters. Decorate with raisins and dried fruit. Bake 8 minutes or until dough springs back when pressed with finger. Cool on a rack. Batter will keep for days in refrigerator.
