VEGETABLE SANDWICHES 
1 (8 oz.) pkg. cream cheese, softened
3/4 c. grated carrots
1 tbsp. lemon juice
1 tbsp. grated onion
1/2 c. finely chopped celery
1/4 c. grated cucumber, drained and squeezed
1/4 c. finely chopped bell pepper

Mix all together. Spread mayonnaise on 1 slice of bread, vegetable mix on the other. Slice sandwiches in thirds.
