CAULIFLOWER AND CHEESE 
2 (10 oz.) pkg. frozen cauliflower
1/3 c. flour
3 tbsp. butter
2 tsp. dried parsley
3 finely chopped onions
2 egg yolks
1/2 tsp. salt
Dash of pepper
1 c. seasoned stuffing
1/2 c. grated Cheddar cheese

Cook cauliflower until very tender; drain. Place cauliflower and flour in mixing bowl and mix for 30 seconds. Scrape bowl and beat 30 seconds more. Add 2 tablespoons butter, parsley, onion, egg yolks, salt and pepper. Mix for 30 seconds.

Place half of cauliflower mixture into a greased 3-cup casserole, sprinkle with Cheddar cheese, top with rest of cauliflower mixture. Mix remaining butter and stuffing together and sprinkle on top of cauliflower mixture. Bake at 400 degrees for 20 minutes. 4 servings.
