YEAST DINNER ROLLS 
1 c. scalded milk
Add 1/4 c. fat & 1/4 c. sugar

Cool to lukewarm. Add: 1/4 tsp. baking soda 1/2 tsp. baking powder 1 scant tsp. salt

Mix well. Mix liquid mixture with all-purpose flour, adding flour until dough begins to pull away from sides of bowl. Empty onto dough board, knead until light and velvety to touch. Let raise in oiled bowl (also oil surface of dough to prevent drying) until doubled in volume. When volume has doubled, punch down. Let rise again and punch down. Work into roll forms of choice. Brush melted butter over rolls and let rise again in (humid, 80 degree temperature). Bake at 400 degrees until golden, about 20 minutes. Remove from oven and brush with melted butter.

Optional: Add 1 egg to liquid. Add a little more sugar for sweeter rolls. Prepare as for sweet rolls using brown sugar, butter and nuts in bottom of pan before placing rolls in pan.
