MARCY'S CASSATA CAKE 
1 lb. Ricotta cheese
1 tbsp. vanilla

Blend Ricotta and vanilla and add milk to make smooth. Fold in drained maraschino cherries, about 1/4 cup confectioners sugar, and 2 small grated Hershey almond bars. Split an angel food cake into 2 layers and spread with above filling. Frost with sweetened whipped cream.
