SHERRY ROAST PORK 
5 lb. loin of pork
Sherry Sauce

Place pork loin, ribs down, in roasting pan. Roast at 325 degrees for 35 minutes per pound (about 3 hours). After 1 hour, start basting with sherry sauce (see below). Baste every 15 to 20 minutes up to 1/2 hour until fully cooked. Serves 8 to 10. Takes 3 to 3 1/2 hours.

SHERRY SAUCE:

1/2 c. brown sugar
1 tsp. grated orange rind
1 tsp. horseradish (opt.)
1/2 c. sherry
1 tsp. prepared mustard

Mix together and bring to a boil. Baste pork loin.
