RICOTTA COOKIES 
1/2 lb. of lightly salted butter (soft)
2 c. sugar
1 tsp. vanilla
1 lb. Ricotta
4 c. flour
1 tbsp. baking soda

Butter and sugar cream together then add the rest of ingredients (mix with spoon). Put batter on teaspoon on a greased cookie sheet. Bake at 350 degrees for 10 minutes.

Do not let cookies brown, they should be golden brown on bottom. When cookies cool, ice them with confectioners' sugar and milk (dip the cookie in icing). Let dry.
