CRANBERRY - ORANGE RELISH 
1 1/2 c. peeled & finely chopped tart apple such as Granny Smith
3/4 c. dried cranberries
1 tbsp. grated orange peel
3/4 c. fresh orange juice
1/4 c. sugar
2 tbsp. raspberry vinegar
Freshly grated nutmeg

In a saucepan combine the chopped apple, cranberries, grated orange peel, orange juice, sugar and a little grated nutmeg. Cover and simmer for 6 to 7 minutes until cranberries have absorbed most of the orange juice and apples are tender. Let cool, then stir in 1 to 2 tablespoons of raspberry vinegar. Refrigerate until ready to serve. Can be prepared a day in advance.
