WINE-OVEN FRIED FISH 
2 lbs. fish filets
1 c. white wine (sauterne or other)
1 tbsp. salt
1 c. bread crumbs
1/3 c. oil
1 tbsp. chopped parsley
2 lemons, quartered

Cut filets in serving pieces. Dip in wine. Roll in salted bread crumbs. Place on well oiled baking dish. Sprinkle with oil and remaining wine. Bake at 450 degrees for 15-20 minutes. Top with paprika. Serve sprinkled with parsley and garnished with lemon quarters. Serves 4-6.
