JODYE'S TROPICAL CAKE 
1 Betty Crocker Super Moist lemon cake mix or butter cake mix
1/3 c. vegetable oil
3 eggs
1 (15 oz.) can crushed pineapple with juice
1/2 c. coconut
1/2 c. chopped pecans

Blend cake mix, pineapple, oil and eggs. Beat at medium speed 2 minutes. Add coconut to mixture. Spread in large rectangle pan and bake at 350 degrees for 30-45 minutes. Spread cooled cake with following icing. Then sprinkle with chopped pecans.

CARAMEL ICING:

2 c. sugar
1 lg. can evaporated milk
2 tbsp. butter
1 tsp. vanilla

Mix sugar and evaporated milk in large saucepan. Cook on medium heat; stir often, until the soft ball or jelly consistency when cool, about 15 minutes. Add butter and vanilla. Can be used plain or can be topped with coconut or nuts, or both.
