BROWN BEEF STEW 
2 lb. beef stew meat, cut into 2 inch cubes
1 c. flour
1 tsp. salt
1/4 tsp. pepper
2 tbsp. shortening
1 tsp. worcestershire sauce
6 carrots, pared and quartered
4 potatoes, pared and quartered
4 celery ribs, cut into 2-inch lengths
1 lb. small white onions
salt and pepper and flour to dredge meat

Melt shortening in bottom of stew pot. Roll meat in mixture of flour, salt and pepper. Brown meat on all sides in hot shortening.

Cover meat with water and simmer for 2 hours.

Add vegetables. Cover and cook until veggies are tender, about 30-45 minutes.

Season with worcestershire sauce, salt and pepper to taste.

Serves 6-8.
