ZUCCHINI BREAD 
1 c. white sugar
1 c. brown sugar
3 eggs
1 c. vegetable oil
2 tsp. vanilla
2 1/2 c. flour
2 c. coarsely shredded zucchini
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1 c. chopped nuts

Beat eggs and sugar together. Gradually add oil while beating. Sift dry ingredients and combine with egg mixture. Use mixer to this point. Add zucchini and nuts blending well with spoon - mixture will be very thick. Pour into two greased and floured loaf pans. Bake at 325 degrees for about 1 hour. Freezes well - nicer texture and slices better after freezing.
