EGG PLANT CASSEROLE 
1 egg plant
3 tbsp. butter
3 tbsp. flour
1 can stewed tomatoes
1 sm. onion
1 green pepper
3 tbsp. brown sugar
1 c. cheese
Salt & pepper

Pare and dice to 1 inch egg plant. Parboil 10 minutes. Mix butter, flour, add tomatoes, onion and diced pepper. Cook 5 minutes. Add sugar, cheese, salt and pepper. Put eggplant in casserole, cover with sauce. Top with cracker crumbs and dot with butter.
