PEANUT BUTTER CRISS-CROSS
COOKIES
 
1 1/2 c. flour
1/2 tsp. baking soda
1/2 c. butter, at room temperature
1 c. chunky peanut butter
1/2 c. packed brown sugar
1/2 c. granulated sugar
1 lg. egg
1 tsp. vanilla

Heat oven to 370 degrees. Beat butter with peanut butter (in a large bowl) until creamy. Add sugars. Beat until fluffy. Beat in egg and vanilla until well blended. Beat in flour and soda just until blended. Roll into small balls. Place on ungreased baking sheet.

Flatten with fork in criss-cross pattern. Bake 10 or 10 minutes or until lightly browned. Cool on cookie sheet 1 minute before removing to cooling rack. Store tightly covered. Makes about 60 cookies.
