TOMATO JELLY 
2 c. strained tomato juice
3 c. sugar
1 env. Pure Fruit Pectin

Boil tomato juice, stir in pectin and bring to a boil. Stir in the sugar until well dissolved, bring to a rolling boil and boil for 3 to 3 1/2 minutes. Remove from heat, let stand a minute, skim and pour into hot sterilized jars or glasses for jelly.

Simple, but good, jellied just right! Also, you can add the spies you like best, do add some crushed red pepper flakes for a little kick.

Take it one step farther, add 1/8 teaspoon of allspice and cinnamon, and a little less of ground cloves, now add 1/2 teaspoon of crushed red pepper. It works well with this recipe and if you follow the recipe above there will be no problem with the jelly setting!
