GERMAN STOLLEN 
1/2 lb. (2 sticks) butter
2 c. sugar
1/2 c. almonds, chopped
1 c. white raisins
grated rind of 2 lemons
2 eggs
1 lb. cottage cheese
5 c. all-purpose flour
1 tsp. salt
5 tsp. baking powder

Dump all ingredients into one large bowl and mix gently with a spoon (or fingers if you prefer). Do not knead. Divide dough into 2 well greased loaf pans. Bake at 375°F for 10 minutes. Reduce heat to 325°F and bake for 1 hour. Remove from pans. Brush melted butter and sprinkle some confectioners' sugar on top.

Makes 2 loaves.
