PICKLED BEETS 
1/2 c. sliced beets
2 tbsp. sugar
1/2 tsp. ground ginger
1/2 tsp. ground allspice
1/4 tsp. salt
1 med. onion, sliced into rings

Drain beets, reserving 3/4 cup liquid. Combine beet liquid with vinegar and next 4 ingredients in saucepan. Bring to boil. Pour over beets. Refrigerate overnight in covered dish. Onion may be added just before serving.
