OLD FASHIONED FRESH APPLE CAKE 
1 c. salad oil
2 eggs
2 c. sugar
2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking powder
1 c. pecans or walnuts
3 c. sour cooking apples, chopped
1 (6 oz.) pkg. butterscotch chips

In a large bowl, mix salad oil, eggs and sugar. In a separate bowl, sift together flour, soda, salt, cinnamon and baking powder. Add to mixture. Stir in nuts and chopped apples. Mix well. Spread mixture in a greased 9 x 13-inch pan. Distribute butterscotch chips on top of cake.

Bake at 350°F for 55 to 60 minutes. Cool and cut into squares. For best results, bake 1 day before serving.
