HONEY ICE CREAM 
3 eggs, separated
2 c. milk
3/4 c. honey
2 tbsp. vanilla
1/4 tsp. salt
2 c. heavy cream, whipped
6 oz. grated semi-sweet chocolate or 1 1/2 c. mashed fresh fruit

Separate the eggs and in a double boiler make a soft custard (just thick enough to coat a spoon) of the egg yolks, milk, and honey. Add vanilla and salt and chill. Beat the egg whites and carefully fold in chilled custard. Whip the cream nd fold into the chilled custard and egg white mixture. Add chocolate or fruit. Follow the usual procedures for freezing ice cream in an ice cream maker.
