HONEY SPICE CAKE WITH ORANGE
CREAM
 
1/2 c. firmly packed brown sugar
1/4 c. butter, softened
1/3 c. sour cream
1/3 c. orange juice
1/4 c. honey
2 egg whites
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. salt

Heat oven to 325 degrees. Spray a 9-inch round cake pan with cooking spray. In a large bowl combine brown sugar, butter, sour cream, orange juice, honey and egg whites. Beat at low speed, scraping often, until well mixed, about 1 to 2 minutes. Continue beating, gradually adding flour, soda, cinnamon, ginger and salt until well mixed. Pour into prepared pan.

Bake at 325 degrees for 35 to 40 minutes or until wooden pick inserted in center comes out clean.

FOR TOPPING: In a small bowl stir together until smooth: 1 tbsp. sugar 1 tsp. grated orange peel 1 tbsp. orange juice

Serve cake warm with orange cream on top. Serves 10.
