ZUCCHINI BREAD | |
1 3/4 c. sugar 3 eggs 1 c. salad oil 3 tsp. vanilla 2 tsp. cinnamon 2 c. zucchini, grated 2 tbsp. orange rind, grated 3 c. flour 1 tsp. salt 1 tsp. baking soda 1/4 tsp. baking powder 1/2 c. nuts or raisins, chopped (optional) Beat eggs until light and fluffy; add sugar and continue beating until blended. Stir in salad oil, vanilla, zucchini, and orange rind. Add dry ingredients to egg mixture along with nuts/or raisins. Turn into a greased loaf pans. Bake at 325 degrees for 50 to 60 minutes or until bread tests done. Remove from pan; cool on rack. Chill before slicing. |
