1 1/2 c. sugar
1 c. buttermilk
1/2 c. Bisquick baking mix
1/3 c. melted butter
1 tsp. vanilla
3 eggs

Heat oven to 350 degrees. Grease 9 inch pie plate. Beat all ingredients until smooth. (I use blender). Pour into pie plate. Bake until knife inserted into center comes out clean, about 30 minutes. Cool. Arrange fresh fruit on top, if desired. (Strawberries, kiwi, and blueberries are pretty and tasty!) Serves 6-8.
