PENNSYLVANIA DUTCH SHO - FLY
MUFFINS
 
1 c. butter
4 c. unbleached flour (can use 1/2 whole wheat)
2 c. dark brown sugar
2 c. boiling water
1 c. molasses
2 tsp. baking soda

Mix butter, flour and brown sugar until they become fine crumbs. Reserve 1 1/2 cups of this mixture for topping. In a separate bowl, mix boiling water, molasses and baking soda. (Mixture will foam.) Add dry mixture to liquid mixture. Mix until blended. (It will be thin.) Pour batter into paper liners and sprinkle with 1 tablespoon dry crumbs on top. Bake 13 to 15 minutes at 425 degrees. Do not over-bake!
