SOUTHERN-STYLE BANANA PUDDING 
1 pkg. banana or banana cream pudding mix (reg. or instant)
2 c. low-fat milk
32 vanilla wafers
3 bananas, sliced
3 egg whites, room temp.
1/2 tsp. vanilla
1/8 tsp. cream of tartar
1/4 c. sugar

1. Prepare pudding according to package directions, substituting low fat milk for the whole milk.

2. Arrange half the vanilla wafers in bottom of 8x8x2 inch square baking dish. Top with half the bananas and then half the pudding. Repeat with layer of remaining wafers, bananas and pudding.

3. Beat whites, vanilla and cream of tartar in medium size bowl at high speed until soft peaks form. Add sugar gradually, beating until stiff peaks form. Spread meringue evenly over pudding, spreading to edge of dish to seal.

4. Bake in preheated 350 degree oven for 10-15 minutes or until golden brown.
