SOUR CREAM POTATO SALAD | |
6-8 med. potatoes, cooked and cubed 1 sm. onion, chopped fine 1 tsp. celery seed 1 1/2 tsp. salt 3 chopped eggs, separate whites and yellows 1 c. sour cream 2 tsp. prepared mustard 2 tbsp. vinegar Salt and pepper 1/2 c. mayonnaise Mix potatoes, onion, celery seed, 1 1/2 tsp. salt and egg whites together and refrigerate. Make dressing of crushed egg yolks, sour cream, mayonnaise, mustard, vinegar and salt and pepper. Mix well and refrigerate. Mix potato mixture with dressing 20 minutes before serving. This serves 6 easily and keeps well in refrigerator. |
