SHRIMP CHOWDER | |
4 lg. onions, peeled & sliced 1/4 c. butter 1 c. boiling water 6 med. potatoes, pared & cubed 1 tbsp. salt 1/2 tsp. pepper 1 1/2 qt. milk 2 c. (1/2 lb.) grated process sharp Cheddar cheese (hoop) 2 lb. raw shrimp, shelled, deveined In Dutch oven, saute onion slices in hot butter until tender. Add boiling water, potatoes, salt and seasoned pepper. Simmer, covered for 20 minutes or until potatoes are tender; do not drain. Meanwhile, heat milk with cheese, until cheese has melted and milk is hot; do not boil. Add shrimp to potatoes and cook until they turn pink, about 3 minutes. Add hot milk and cheese mixture. Heat, but do not boil. Makes 8 servings. |
